Why the emphasis on a high 'roadbed' (i.e. ballast)?  How many times do you see 2 ft high 'shoulders' on tracks?  I haven't re-checked them but I think that all the vids and stills that Erhard, Pol an Upnick have posted showing US trains, never show high ballasted tracks.

Or is it me??

Nope, not you Tom. Shoulder has to be that high for the inbuilt point motors. What you do is ballast the edges till it's level. I saw it done on the MRF. I'll see if I can find the link to the pic.

Dead right Pol and a great finish you get when it's done properly.
Presumably it applies to other scales as well?  So why do this lot tell you to use the pre-ballasted stuff and DON'T say to finish it off properly? (But DO spend time and effort merging the road to match the high track - odd)

I guess it's personal preference in the end...

Depends on if you've looked at real track and also how long can you wait before getting the trains running.
